I think you are seeing the templates from the Windows device class being inherited to the subclass.
Both of the templates will co-exist nicely and I wouldn't recommend deleting the Informant template as you never know when you may want it again. You should just unbind that template where you don't want it.
In order to override those settings on the subclass, you should just be able to change the bindings. Keep in mind that just because the templates show up in the Templates view doesn't mean they are bound to the class, you have to apply the bindings by clicking on Bind Templates from the drop down menu in the templates view.
