Go to the Templates page and select the Bind Templates... menu item. This will bring up the Bind Templates dialog which lists all the templates available to this Device Class/Device. The ones that are bound are already selected. You can select or deselect templates to set the bindings at this level.

There are two ways. You can bring up the Bind Templates dialog to see what is selected. Alternatively, you can take a look at the zDeviceTemplates zProperty. (That dialog is just a fancy gui for setting the value of the zProperty.)

The checkboxes are only shown for templates actually defined at that Device Class. Without actually looking, I think this is for the delete and move menu items. The Bind Templates dialog doesn't make any use of the checkboxes.
It's unfortunate that you can't determine template bindings just by looking at a Device Class's Templates page. The Templates page for a Device is different, it shows only the bound templates and not any available templates that aren't bound. This is a situation I'd like to make more sane in 2.2.
