As far as I know (my IIS knowledge is a bit limited), you won't be able to monitor it using the setup I described. We do however have an IIS ZenPack (http://www.zenoss.com/community/projects/zenpacks/) available through Zenoss Enterprise.

Regarding the responsetime graph, you are not seeing any data at all? Were you able to follow the steps in the Graphing section of the HowTo? Not sure why you would see backup agents, or what they are exactly. Could you give some more details?
