I got it working!  I think the issue was caused by our server either 1. being rather quiet or 2. not providing the information needed.

I read in a post that RRDs are not generated until enough data has been collected for each datasource's datapoint.  (maybe someone more fluent in RRDtool could confirm?).  The ApacheMonitor is made of one datasource with several data points and of those datapoints my server wasn't providing anything other than zeroes (guess i have a quiet site).

So...I took a stab in the dark and changed the cycle time (to force in some values) from 300 seconds to 30 seconds and tada! graphs appeared.  Now, whether or not my assumptions are correct (not enough data was being collected) I can't confirm, but changing the cycle time seemed to be the answer.
